raspberries
Jul. 8th, 2018 07:14 amAbout a week ago we got the first three red raspberries off the canes in the back yard. Then they were producing half a cup a day, then a cup a day. The night before last, we started worrying what to do with them all, and
shalmestere suggested sprinkling them over lemon curd -- if only we had some lemon curd. As it happens, we did have some lemon curd that I picked up at the greenmarket six months ago (the vendor had damson jam, which is rare enough that I couldn't pass it up, and they offered three jars for the price of two, so I felt compelled to get three different things....) But just lemon curd and raspberries didn't seem sufficiently festive, so I whipped together some heavy cream, vanilla, and powdered sugar and dolloped that on top. Yum.
Yesterday
shalmestere picked a pint of raspberries. Ack! We still had lemon curd and whipped cream, but
shalmestere wanted to do something even festive-er and suggested meringue nests. I'd never made baked meringue (only used meringue as an ingredient in cookies, with less than stellar success), but I looked up a recipe in Joy of Cooking, tried it, and it worked quite well. I used the convection oven in hopes that they would dry more quickly, and they came out somewhat browner and crisper than I intended, but still quite good (try a little less sugar next time). So dessert last night was meringues, topped with raspberries, topped with lemon curd, topped with more raspberries, topped with whipped cream. And we've finally finished off Wednesday's crop of raspberries; we still have Thursday's, Friday's, and Saturday's, plus whatever comes today.
