The last batch of bread didn't rise very well. This time I gave the sponge plenty of time to rise, and added the salt later in the process, and it rose better. Not exactly what I had in mind, though...

I did minimal shaping and kneading at the end: I think it was too soft and airy before the final rise in the loaf pan.
Tasty, though.
